We often associate Czech cuisine with knedliky and fried cheese. However, there is one more classic Czech dish that you will find in many places, and the number of versions is huge – Czech garlic soup. All its releases have one thing in common – it’s delicious!

If you’ve been in the Czech Republic, you’ve definitely tried this soup! You will meet various editions of it in different places. Sometimes it is with croutons, sometimes with cheese, sometimes with ham, and sometimes with an egg. There are many options, and one of them is ahead of you.

Ingredients for the Czech garlic soup

  • 3 medium potatoes
  • Onion – 1 large
  • Bread for croutons – 3 slices
  • Smoked bacon 100 g
  • Dried marjoram – 1 tbsp
  • Hard cheese – 100 g
  • Garlic – 15 cloves
  • Stock – 1,5 l
  • Green parsley – if you have to decorate

We start by chopping the onion and peeling the garlic. If our garlic is sprouting, the green part should be cut off, because apparently it makes our breath not too fresh! 🙂 Then finely chop the garlic, dice the onion and bacon. First, fry the bacon in the pan, add the onion, and finally add the garlic. Fry everything for a while and pour the stock. After a while, add the potatoes and cook them in the soup until soft. At the end, add marjoram and a pinch of fresh, chopped garlic.

Dice the bread and fry it. We add it after pouring the soup on the plates. Remember that the toasts are soaked quickly in hot water, so it is better not to let the soup wait too long to be served.
