If you put a burger in front of me and a good pulled pork sandwich, I think that I would not think about choice for a long time. I can eat them in any quantity, and today I invite you to my latest version.

Pulled pork comes from the United States. It is a method of preparing meat slowly at low temperature. The name owes its name to the fact that after preparation process meat easily divides by the fork into pieces. In some areas, the meat before baking is soaked in brine. The pork shoulder is the most commonly used partto prepare pulled pork.

Ingredients:

  • pork shoulder (1-1.5 kg)
  • garlic
  • pepper
  • salt
  • sugar
  • Dalmatian (or Provencal) herbs
  • Bay leaf
  • Fresh cucumber
  • Mayonnaise
  • sweet chilli sauce
  • bright soy sauce
  • ginger
  • black sesame
  • bread

We start with the preparation of meat. We hit it with a fork so that the aromas go deeper. Then we make holes with a knife and put a peeled clove of garlic in it (about eight in all). Add salt, pepper, sugar, herbs and bay leaf and put in the oven. I used a baking bag so that the meat was not dry. I started with a 1-hour baking at 140 degrees, then about 2 hours at 110 degrees. The baking time depends on the weight and shape of the meat, but it must be reckoned that it will be a minimum of 3-4 hours.  During the baking, I turned the bag so that the juice in it covered the meat. At the end of baking, you can remove the meat from the bag and increase the temperature to about 180 degrees to roast the skin.

Just before serving, we slice bread and toast it. We add a bit of mayonnaise and put cucumber on the bottom. After shredding the pork, add soy sauce, grated ginger (for one portion about 1 cm) and sesame. Mix and put on the bread, add a sweet chilli sauce to the top and close with a second slice!
