So far I associated cabbage with cabbage soup and sauerkraut soup when it comes to soups. Its red variety is most often used in salads. Today it’s time for something new – red cabbage soup.
While browsing the latest edition of Kukbuk magazine, we saw the headline “Red Cabbage”. The idea immediately seemed interesting. However, we decided to modify the recipe and make some improvements.
Red cabbage soup – ingredients:
- 1 small red cabbage
- 1 red onion
- about 50 g of butter
- spoon of raisins
- spoon of dried apples
- yoghurt
- sunflower seeds (a handful)
- walnuts (handful)
- prosciutto (5 slices)
- litre of vegetable broth
- pepper
- salt
- spoon of lime juice
- a teaspoon of wine vinegar
- oil
We start making the soup by shredding the cabbage and onion. Add butter and stew it. In the meantime, we add raisins and apples. Simmer until soft, adding broth, lime juice and wine vinegar. We blend the whole thing and season it. In the meantime, fry chopped walnuts, sunflower seeds and small diced ham in a pan. Put the ready soup into the bowls, adding a teaspoon of yoghurt in the middle, the previously fried ingredients and a few drops of good olive oil.
Red cabbage cream soup is very good and it makes me wonder we didn’t come up with this idea before. If red cabbage ever comes to your home, you already know what to make of it! :)
