Looking at the number of apples on my tree I think that it will be a good season. We have to do something with them, and apple pie with nut crumble is the perfect solution to this problem. Let’s do it!
In the garden, I have an apple tree, quite old and I don’t know what species it is. When ripen it’s green and red and a little sour.
Ingredients for apple pie:
- 2 eggs
- 200 g butter
- 100 g cane sugar + 1 tbsp
- 100 g of powdered sugar
- 1/2 cup ground walnuts
- 220 g of cake flour
- 1 kg of apples (peeled and diced)
- 3 teaspoons of cinnamon
- (spice for gingerbread)
We start by making a base for the cake. Mix together 100 g of cold diced butter, 1 egg and 150 g of flour and 150 g of powdered sugar. Knead and put in the fridge to cool. In the meantime, we make crumble. We combine the second 100 g of butter with 100 g of sugar, ground nuts and 170 g of flour. Knead and put in the fridge. Put it apart so that you will not make a mistake :)
Now it’s time for apples. I used are sour and small. Peel the apples and cut into cubes removing the seeds. Fry the apples adding a tablespoon of sugar and spices. If Your apples are sour, you can add less sugar. Due to the species, some of them will keep their shape and others will fall apart. To have apples more solid after baking we need to put one whipped white part of an egg.
After an hour, roll out the dough and put them in the form. Our cake was 25 cm in diameter. Bake at 180 degrees for 25 minutes. Remember to make some holes in the base using a fork. After first baking we wait for a moment, add apples and crumble. Bake at 180 degrees for about 40 minutes.
After baking, leave to cool. It tastes best warm, but it will be hard to cut a piece of apple pie. After cooling, slicing is much more secure :)
