Good soups are perfect when you want to cook dinner quickly and simply. We use few things and add all ingredients to the pot without much preparation. Lentil and sweet potato soup, besides being easy to prepare, also tastes great and looks beautiful thanks to its colors. Note – the soup is healthy too! :)
Ingredients
- lentils – 1 cup
- sweet potato – 1 pc.
- sliced tomatoes – 1 can
- onion – 1 pc.
- carrot – 1 pc.
- garlic – 3-4- cloves
- spinach – about 200 g
- fresh coriander – 2 tablespoons, chopped
- freshly grated ginger – 1 tbsp
- vegetable broth – 1 l
- curry powder- 2 tsp
- coriander grains – half a teaspoon
- cumin – 1/2 tsp
- sweet pepper powder – 1 tsp
- salt – 2 tsp
- ground black pepper – 1/4 tsp
- 3 tablespoons of oil

The great thing about this dish is that the proportions of the ingredients really depend on you – if you like a product or a spice more, give it more. You can also add other ingredients, such as red pepper – it will fit perfectly in the soup. As for the lentils, we used dried red. Spinach can be both fresh and frozen – it’s up to you.
We start by mixing all the spices in a mortar. Heat the oil in a pot and fry the finely chopped onion. Then add the grated carrot. Fry for a while, add a little broth and stew for a few minutes. Add grated ginger, squeezed garlic and mixed spices. Add the tomatoes and pour the broth over everything.
Rinse the lentils thoroughly several times and add them to the boiling broth. Peel the sweet potato and cut into medium-sized cubes. We add to the soup. Simmer everything for about 25 minutes (until the lentils and potatoes are soft).
Finally, add the spinach and fresh coriander. We cook for a while and it’s ready!
