I like soups, one of my favourite is corn soup. Many of versions were created in my kitchen, but the one that I present to you is one of the best. Let’s do it!
Why do I like corn soup? There are several reasons. The first of these is the taste of corn itself. Sweet, but well-fitting to many ingredients. The second is consistency, which I always try to keep – creamy, but with noticeable pieces of corn. The third reason is the simplicity of preparation regardless of whether it is the corn season or not.
To do corn soup you need:
- chicken leg
- two carrots
- small, white parsley
- two cans of corn
- pistachios
- halloumi cheese
- pepper
- salt
- chilli
We start with the preparation of vegetable and poultry broth. Add chicken and vegetables to the pot with water. When it’s ready, we take out the meat. We add corn and cook. After a few minutes, we blend the whole. We return with the pot to the stove and reduce it a little to get the consistency of the cream. In the meantime, roast the chopped pistachios in a pan and grill the diced halloumi cheese. At the end of cooking, add salt and pepper.
Soup pour into a bowl, delicately add halloumi cheese, sprinkle with pistachios and a little chilli. Soupe is very tasty, but also filling.
